Beef lazagne

Hey guys! So I started this blog a while ago but haven't been posting any recipes <my bad> So I thought I'd change that by sharing a recipe I've come to love. Everyone loves lazagne! Its like pizza -you can throw in anything you want and it always turns out very well. So here it goes. This is a recipe I put together a couple of yrs ago and its never failed me.






Ingredients <serves 6>

Minced beef
4 cloves Garlic
1 white onion
1 large Red capsicum-pepper
1 large Yellow capsicum-pepper
2 Aubergines
3 Tomatoes <grated>
2 packets Tomato paste
1 beef chilli cube
Oregano/mixed herbs
black pepper
2 Tablespoon Royco
2 cups water
1 packet lazagne sticks
cooking cream
Cheddar or edam cheese
Mozarella cheese






 Chop up and cook the garlic and onions together. Chop and add peppers and aubergine.





Grate 3 tomatoes and add to cook. Add tomato paste and cook for a few minutes. Add meat and cook till brown. Then add various spices, and water and leave to cook.

Boil water and put in large bowl. Add lazagne sticks for 10 minutes until cooked. *note do not boil lazgne sticks the way you boil pasta.* 
Grate cheese. 
Once everything is cooked, you can now put it all together. Always start with a stew base, then place lazagne sticks and add stew, cheese, cooking cream in that order. You can have as many layers as you want. 
Add oregano or mixed spices on the last and top layer as a garnish.
Pop in oven till cheese is melted*aprox 15 minutes* Heat oven to 180 degrees 10 minutes before.  Once it is ready, remove and leave to cool down for about 10 minutes. *Note if you serve it immediately it will be hard to get a good square cut without everything spilling out* 





Enjoy your meal with a salad and a fresh baguette. Garnish with paprika.

CHOCOLATE MOUSSE IN 10 MIN


CHOCOLATE MOUSSE

Ingredients
250 gr. Cooking chocolate[ Cadbury's Bournville works just well-3 packets]
6 eggs
80 gr. de butter [unsalted]
Whipped cream
Icing sugar
Chocolate syrup
Fresh Strawberries
Sugar
Vinegar [wine or white]
Good music c.d

Play a good album in the background. Thats rule number 1 to good cooking! Enjoy yourself!
Wash strawberries and slice them in nice round [julianne] slices.
Sprinkle sugar over them followed by the vinegar.
Reserve in Fridge for 30 min-1 hr.
*why? Well this is a great method to get sweet strawberries to accompany any desert since the vinegar helps the strawberries suck in all the sugar, and in this way the vinegar itself loses its bitter taste! Amazing right!!! Well its not science but a pretty cool kitchen experiment that works!*

Boil water in sufuria.
Put the chocolate in a a strong bowl, and place over a sufuria so that the chocolate may melt slowly in the bowl instead of microwaving it. Add butter to melt aswell.
In another bowl separate the yolk and the white in the eggs. Mix the egg yolks with the choc-butter mixture and once mixed,reserve in fridge.
Whisk the whites at a very high speed till they appear fluffy as clouds[ turn the bowl upside down, if it doesn’t pour out-it is at the cloud point-kitchen talk in Spanish-I hope it’s the same in English- lol]
Mix in reserved chocolate mixture till you have a nice creamy mousse, and return to fridge till serving time.
Whip some whipping cream with icing sugar in another bowl and serve it on the top however you'd prefer e.g in a bowl or a glass with the reserved strawberries and chocolate syrup to decorate on top.
