Stir-fried rice and teriyaki chicken


Hey guys!
So this week I was craving chinese food  and since I didn't want to spend a fortune at China Plate, I opted to make it myself. 3 words, simple, fast and tasty!



Ingredients for the fried rice
1 and a half cup rice
Half cup Sweet corn
1 red pepper
2 handfuls french beans
Garlic
Onion
Soy sauce
Salt and black pepper to taste

Ingredients for the chicken
Boneless chicken breasts or thighs
Olive oil
Garlic
Onion
Ginger
1 Green pepper
Teriyaki sauce
Soy sauce
Salt and black pepper to taste
2 tablespoons royco



Start of with cutting and boiling french beans then put aside. Boil the rice *for those who dont know how to cook rice that well, always put the double the cups of water per cup of rice, in this case 3 cups water for 1 and half cup rice*  [be careful not to overcook it because it will not fry aswell] . In a separate pan fry chopped garlic and onions with some olive oil. Then add previously boiled french beans and chopped red pepper. Pour in some soy sauce and then add the cooked rice. Make sure you lower the heat at this point so as to mix ingredients well without them burning, put aside cooker if necessary. Lastly add sweet corn, salt and black pepper and mix well.








For the chicken:
Cut the chicken in cubes. Chop green peppers and put aside. In a pot, cook garlic, onions and ginger with some olive oil. Once done, add green peppers and then the chicken. Once chicken starts browning add teriyaki sauce, salt and black pepper. Add some soy sauce to enhance taste and color. After 8 minutes thicken the sauce with 2 tablespoons of royco mixed in 1 cup water. Leave to cook for 5-8 minutes.

Boerewors and butternut squash.

Hey so me and my housemates have been keen on eating healthy foods offlate-lets call it a #lifestylechange! Sheila has been blending kales, carrots, beetroots, and just about anything that is green! So I figured I'd also start cooking some more veggies aswell!! Here's a simple and healthy recipe I put together!







Ingredients
Baby boerewors
300 ml can of tusker
1 pack mixed vegetables-preferrably french beans and carrots
2 potatoes
1 butternut
1 onion
3 cloves garlic
1 chicken cube
2 teaspoons curry powder
1 teaspoon black pepper
1 tablespoon royco
1 packet tomato paste






Chop and cook garlic and onions. Peel and chop up the butternut and potatoes in cubes, then wash and add to the cooking pot. Add mixed vegetables and various spices(except royco). Stir fry for a few minutes, add tomato paste and 3 cups water and cover to cook. When vegetables are cooked, and water is reducing add royco and cover till broth is nice and thick.
In a separate pan, brown the boerewors and then pour in the can of tusker and leave to cook. It will take approx ten minutes for the sausages to absorb the beer and about 2 more to fry. *note once alcohol is burned it cannot make you drunk-info to those who have never cooked with alcohol before and yes Ive been asked that question in the past* The boerewors are much tastier this way.

Chicken sub-sandwich!

Forget Ham and brawn! On days when you don't feel like spending too much time in the kitchen, try this easy chicken-sub out!





Chicken breast      
Garlic
Olive oil
Oregano
Black pepper
1/2 chicken chilli cube

Burger buns [brown or white]
Mayonnaise
Cheese slices
Lettuce

So its pretty simple, cut the garlic and cook with the olive oil in a pan.
Cut and add strips of chicken to pan and finish off with the spices.


Cook for about 7 minutes until brown.


Simple-slice buns, and spread mayonnaise*and ketchup if you love it like I do!"
