Sweet Pea and Oyster beef with Jasmine rice

Happy new week to you all!
Lets start it of with some chinese food! Yes I love chinese food and I cook it alot. I love experimenting with different spices and creating new meals.
On Saturday I did just that.
I made sweet pea and oyster beef. It was extremely simple and fast and INCREDIBLY TASTY. I was licking my plate and I had two servings and leftovers the next day #dontjudgeme :-))


Oh well here it is so that you can try it too.

Ingredients:- serves 4-5
Beef strips [tenderloin] 400-500 gr
1 red pepper/hoho
1 onion
4 Spring onions
1/2 pack sweet pea
4 garlic cloves
Ginger
Blue dragon oyster and spring onion stir-fry sauce
Dark Soy sauce
Black pepper
2 cups Jasmine rice
Vegetable/olive oil

Start of by boiling the rice. [2 cups rice to 4 cups water] Once it is ready, put aside.
Then chop onions, ginger and garlic. Leave the spring onions for later. Take a sufuria/cooking pot and cook the onions, ginger and garlic with some vegetable/olive oil. 


Chop the sweet peas in halves and the red peppers in cubes and add to the pot.


Follow by adding the meat and cover. 


 After a few minutes, stir and add blue dragon oyster sauce [the full packet] stir and cover yet again.
 

Keep checking and stirring making sure the meat doesn't stick in the bottom.Add the spring onions. After a few minutes you'll notice that as the meat is cooking, it is also releasing some water. You can add 1/2 to 1 cup depending on the consistency you want.



Cook for another few minutes. Uncover and add soy sauce for the color and mushroom flavor. Be careful not to add too much [precisely 3-4 tablespoons] and a dash of black pepper and salt if needed. [Note: that the oyster sauce and soy sauce are already salty] At this point you don't have to cover. Allow to cook a bit more and allow sauce to thicken.


Once it is done, remove from heat.
Also note that you can add the red pepper and sweet pea after the meat and not before if you want your veggies to be a bit crunchy like they make them in chinese restaurants.
VOILA!!!
Serve with jasmine rice and enjoy!




Simple, tasty and fast too!!!
I recommend the soft part of the cow meat for this recipe [tenderloin] since I didn't have to boil my meet before for it to soften. The butcher recommended that part and even cut it up in strips for me and it cooked fast and was very tender.

Sweet and sour pineapple and pork with white rice

Hey lovely people!
So I had an experimental type of weekend. Wanted to try making new meals and I believe that they were succesful, this one especially. 
I was craving chinese food and since I didn't want to spend much I opted to make some.


I bought a juicy pineapple and some pork meat, some peppers, used some leftover sweet and sour sauce and vuala AWESOMENESS!!!

Ingredients:- [serves 3-4]
Pork chunks [about  600gr]
1 Green pepper/hoho
1 Red pepper/hoho
1/4 pineapple
1 onion 
4 cloves garlic
sweet and sour cooking sauce
Soy sauce
Black pepper
1 tablespoon royco to thicken soup/ you can also use corn flour instead

I started off buy cooking my rice. Remember to always put double the cups water per cup rice. Once it was done, I put it aside and covered to keep it steamy.
I then proceeded to chopping some onions and garlic, the pineapple in chunks, and the peppers in long strands.
 I then cooked the onions and garlic and added the peppers/hohos there after.



Once they had cooked for about a minute I added the pork chunks since I wanted the peppers to keep their crunch instead of overcooking them.
 





I added some salt, 1 teaspoon black pepper, a dash of soy sauce to add flavor and color, and about 4 tablespoons sweet and sour sauce [REAL THAI sweet & sour]. I then covered everything and allowed to cook for a good 5- 8 minutes.



After that I stirred in the pineapple chunks. In a cup with 3/4 water I mixed in 1 tablespoon royco/ corn flour, added to the meat and covered yet again.



Within a few minutes the pork was cooked and the stew was good and thick. White meat doesn't take too long to cook so if you're in the mood for a quick meal, say 10-15 minutes, try making this using pork or chicken chunks. Make sure to add pineapple chunks two-five minutes before putting the meal off to avoid overcooking.
There you have it. 
Simple, fast and sooooo tasty.
Serve with white rice and enjoy.

Stir-fried rice and teriyaki chicken


Hey guys!
So this week I was craving chinese food  and since I didn't want to spend a fortune at China Plate, I opted to make it myself. 3 words, simple, fast and tasty!



Ingredients for the fried rice
1 and a half cup rice
Half cup Sweet corn
1 red pepper
2 handfuls french beans
Garlic
Onion
Soy sauce
Salt and black pepper to taste

Ingredients for the chicken
Boneless chicken breasts or thighs
Olive oil
Garlic
Onion
Ginger
1 Green pepper
Teriyaki sauce
Soy sauce
Salt and black pepper to taste
2 tablespoons royco



Start of with cutting and boiling french beans then put aside. Boil the rice *for those who dont know how to cook rice that well, always put the double the cups of water per cup of rice, in this case 3 cups water for 1 and half cup rice*  [be careful not to overcook it because it will not fry aswell] . In a separate pan fry chopped garlic and onions with some olive oil. Then add previously boiled french beans and chopped red pepper. Pour in some soy sauce and then add the cooked rice. Make sure you lower the heat at this point so as to mix ingredients well without them burning, put aside cooker if necessary. Lastly add sweet corn, salt and black pepper and mix well.








For the chicken:
Cut the chicken in cubes. Chop green peppers and put aside. In a pot, cook garlic, onions and ginger with some olive oil. Once done, add green peppers and then the chicken. Once chicken starts browning add teriyaki sauce, salt and black pepper. Add some soy sauce to enhance taste and color. After 8 minutes thicken the sauce with 2 tablespoons of royco mixed in 1 cup water. Leave to cook for 5-8 minutes.
