My CALCIUM BOOST on a Saturday morning!

Hello good people!
I absolutely love Saturday and Sunday breakfasts because of how much time I have in the morning!!
Recently I realized that I haven't been taking any calcium in my system so I opted to make a smoothie this morning for that calcium boost.
I used 1 glass cold milk, 3 kiwis, 2 frozen bananas and 1/2 cup apple juice.
1 word: winning!!!
This was sooo yummy and so refreshing!

BONUS COOKING TIP: French toast


French toast is just about the easiest thing to make. Here are my tips on making it even better:-
-use eggs with milk
-don't soak the bread in the egg-milk mixture for too long because it becomes very soggy even after cooking. You want your toast to be crunchy not soggy.
-add a bit of vanilla essence in the mix
-don't use too much oil, again we don't want soggy bread.

Enjoy some toast this week!!

BACHELOR MEAL OF THE WEEK: SPICY SCOTCH EGGS

Happy Tuesday to you all.
As promised here is my simple scotch egg recipe.

 
Scotch eggs are very easy to make, They need just three ingredients so you understand why Im calling them the bachelor meal of the week.
This is a new feature on the blog. Think easy. Think quick. Think minimal ingredients. That's what the "BACHELOR MEAL OF THE WEEK" is all about & since we all love breakfast, figured I'd kill two birds with one stone and make a breakfast meal.

So here it is....

Ingredients:-
Spicy beef sausages
Eggs
*Breadcrumbs
Vegetable oil

I stated off by boiling my eggs [water and eggs in a sufuria all at once] for about 10 minutes.


 

 Once they were done, I drained the hot water and cooled them with cold water. Heat oil in pan.
 I then proceeded to peel them afterwards. Once I was done I cracked another egg on a plate and put breadcrumbs on another plate. 


I then opened a sausage for each egg and covered it with the inside meat, being careful to cover every ounce of white. After that I carefully dipped them fully in the egg, and then in the breadcrumbs until they were completely covered and fried them in the hot oil for a few minutes. Be careful as you fry them since the sausage meat burns quickly. We want them brown and not blackened. 



Once they are done serve them with a salad or a ketchup. Simple and easy!



Mine were not perfectly oval in shape since I didnt use a deep frier but tasted equally good. If you have a deep frier use it for this recipe, and if not just use a deep pan instead.
I used the spicy sausages because I find them more flavorful than the normal ones yet you can use the normal ones as well if you're not a fan of spice. Remember it is one sausage per egg!

Orange-butter pancakes

Hey guys!

On that note, I decided to make something sweet. Ever had those evenings you didnt feel like eating anything salty. I decided to make breakfast for dinner with a twist.

 I came up with a simple and absolutely tasty pancake recipe.
I combined the ingredients I had at home, bought some syrup and whipping cream and vuala! I was in pancake heaven.



Ingredients:- [Makes up to 12-14 pancakes]
2 Cups self raising flour
1 cup milk
The juice of one orange
Orange zest/ grated peel
2 eggs
1 cup melted unsalted butter
1/2 cup sugar
1 teaspoon vanilla essence
Maple syrup
Can of ready whipped cream
Cooking oil/butter



I started off by beating the eggs for about 1 min. The more you beat them the more air you trap in, which in turn makes your pancakes nice and spongy. 



















I then added the sugar, half the milk, vanilla essence, the butter and mixed them all together.
After that, I added the flour, the rest of the milk, the orange juice and lastly the orange zest and mixed it well.
The batter at this point is slightly thick and flows easily.







I then put a pan with oil to heat up on the cooking stove. 

Once the oil was hot, I added a big spoonful of the batter.





I didn't move the pan too much to spread the batter since I was aiming for thick and fluffy pancakes and not the usual thin ones, [commonly known as crepes] that most people like cooking. 
Careful not to burn them on one side, I flipped them and allowed to cook for a minute or two until they obtained a nice brown color.



















  I then served them with some maple syrup, some whipped cream and some orange zest/grated peel. 



These were absolutely so yummy and I'm eagerly awaiting your feedback as well.  





P.s You can get the maple syrup at most nakumatt supermarkerts & I found the can of whipped cream in the nakumatt uk located in westlands.
